Today on the blog I’m bringing you a recipe I’ve really wanted to share but only got the time to film last week. It’s my take on an Açaí Fruit Bowl (pronounced ah-sigh-ee) and it’s just perfect for the summer. The Açaí berry, hailing from Brazil, is mainly famous for it’s dietary qualities so it’s a delicious choice for a fresh breakfast or a healthy snack option. INGREDIENTS (Serves 2 people)
For the base:
1 packet of frozen Açaí – 100g
1 Banana chopped up and frozen
2 tablespoons of Milk
1 tablespoon of Honey (or to taste)
For the topping:
Granola (add as much or as little as you like)
Fresh seasonal fruits
- Run the Açaí packet under lukewarm water just enough to break it into smaller pieces and place in the blender. I buy my Açaí in the frozens at Trader Joes.2. Add 1 chopped frozen banana into the blender. I sometimes leave the banana natural but then that means I have to chill the Base for about an hour in the freezer because the warmer banana melts the Açaí a little too much. If you can remember to chop and pre-freeze the banana then that’s better!3. Add the Milk and Honey4. BLEND IT TOGETHER until smooth consistency!
When all that’s ready…
Pour the yummy blender mixture into a bowl (or two since this recipe makes 2 bowls) and add a handful of Granola, put the fresh fruits on top and scoop a spoon of peanut butter on the top for a salty little kick to balance out the sweetness. The consistency that I like is somewhere just above frozen but not really so ice hard that you can’t dig your spoon into it.
