
The morning is the best part of my day. I usually feel the most refreshed when I’m hitting mid-morning and the initial chores of the day are done! As Zoe gets fed, hubby and I sit down to a nice coffee (which he usually makes!) and THIS easy morning brunch. I want to share it with you because it is so delicious, healthy and quick!

Smoked Salmon on Toast with Avocado + Microgreens. It’s the easiest combo to put together, I swear. It works perfectly for both busy days and slow days alike. Hubby likes to bring his up a level and eats this with a side of eggs and it’s always delicious with a side bowl of seasonal fruit. It truly feels like Spring/Summer in your mouth!

For the toast, my recipe is as follows:
+ A light slice of bread. This week I’ve decided to bust out the bread machine and make our own bread in-house again. I couldn’t deal with how many gross ingredients are in the store stuff.
+ Garlic Spread. Whole Foods and Trader Joe’s have great options but a local farmers market can also sell these types of spreads. Get one with simple and few ingredients in it. The spread really isn’t strong (I know you’re thinking garlic??). It’s just enough to give it a little tartness and bring out the flavor in the smoked salmon and avocado!
+ Smoked Salmon. I’ve tried smoked salmon from a lot of stores. I love it. My absolute favorite is the Changing Seas Salmon Cold Smoked (again, found at Whole Foods) because the texture is soft and the flavor is subtle but delicious. Also, the price isn’t too outrageous (about $10 for 8oz) and the company have good and sustainable fishing practices.
+ Avocado. I can’t believe there was a time in my life that I hated avocado. I’ve realized that it’s something that goes well with everything and you just have to know how to garnish and use it. Plus, it’s packed with healthy fats. That’s a great start to the day right there.
+ Microgreens. I never paid much attention to microgreens, but I feel as though I’ve been seeing a trend in these little guys lately. The idea is that in the earlier stages of life, a plant often packs more nutrients than in their more mature states. You can find a blend you like that suits your palate. I’m not into a bitter type of palate in general, so I stay clear of arugula and such. These have mustard seed, broccoli, kale and much more! I got them at our local farmer’s market. Not to mention they’re aromatic, rich in flavor and look uber cute on top.
+ Lemon. YUM. No explanation needed!

A small bowl of watermelon freshens up the morning. It’s a colorful and easy fruit to quickly prep and is packed with lots of… well, water, I guess! Who doesn’t need extra water where they can get it!? We kind of jump around what’s in the fruit bowl. Some days it’s strawberries, another blueberries or grapes etc.

And don’t forget a beverage! We usually have coffee (or I have hot chocolate instead sometimes!) but you can opt for a smoothie, juice or some other hydrating and healthy option!
